Found this recipe on the web, tried it out last night. My first time using tomatillos. I was a bit concerned - Wayne is normally not great on citrusy flavors in savory food. And the recipe calls for 4 jalapenos so I was worried it would be a bit hot for Wayne...then I tasted the jalapenos and they were really bland so I ended up adding a bit of cayenne.
While cooking the mess, Wayne was complaining about the smell...we were both worried, I figured I'd pull something from the freezer if it was inedible. Wrong...
Wayne declared it "Excellent" and I thought it was wonderful. I think we will have a regular Enchilada night around here. These were way better than I've ever eaten in a restaurant. Of course, upstate NY is not exactly a haven of Mexican restaurants. Now, Zacateca's in Neenah, Wisconsin...THAT is a place to eat
